1 lb. hamburger (de-fat) OR may use ground
turkey breast or 1 pkg. refrigerated or frozen soy crumbles)
1 medium onion
1 cup celery
1 green or red pepper
1 clove garlic
8 oz. fresh mushro
oms
1 Tbsp. olive oil
2 cups cooked brown rice (not instant)
1 can tomato soup (reduced fat & reduced sodium, such as Healthy Request or Amy's Light in Sodium)
1 can diced tomatoes (with green chilies for extra spicy)
½ tsp. garlic seasoning powder
Brown meat, drain and place in casserole. Chop onion, celery, green pepper, and garlic; wash and slice mushrooms.
Sauté vegetables in 1 Tbsp. olive oil until softened. Add to casserole. Add rice, tomato soup, diced tomatoes, garlic & pepper. Stir. Bake, uncovered, at 350° F for 45 minutes.
