3 medium ripe bananas (1 ½ cup mashed)
½ cup sugar
¾ cup skim milk
1 tsp. vanilla
Dry ingredients:
2 cups all purpose flour
½ cup ground flax
1/3 cup oat bran
1-2 tsp. baking soda
1 tsp. cinnamon
Preheat oven to 350°F. Mash bananas and sugar together in medium-sized mixing bowl using a fork. Add the milk and vanilla. Add the dry ingredients and mix smooth.
Lightly spray a 9" X 5" non-stick loaf pan with vegetable cooking oil spray. Pour batter into pan and bake until loaf is done - when it springs back to the touch in the center and a toothpick inserted in the center comes out clean, about 45-50 minutes.
Flax: Grind whole seeds in coffee grinder or buy milled or ground.
Oat Bran: Look for it in the hot cereal section of the grocery store.
