1 1/3 cups skim milk + 1 tsp. lemon juice or white vinegar 2 cups wheat bran or Millers Bran 2/3 cup water ½ cup brown sugar 2 Tbsp. canola oil 2 egg whites OR 1 whole egg 1 cup whole wheat pastry flour 2/3 cup all purpose flour 1 tsp. baking soda Optional: raisins, currants, or chopped walnuts
Combine milk and lemon juice or vinegar and allow to stand 5 minutes.
Combine bran, water, brown sugar, oil, egg whites and milk. Allow to stand 15-20 minutes.
Add flour and baking soda; stirring by hand only until blended.
Spoon into 12 muffin tins sprayed with non-stick cooking spray. Do not use paper muffin liners because they will stick.
Bake at 400°F for 15-20 minutes, or until muffins spring back when touched lightly.
Note: Wheat Bran: Look for this in the baking section, natural foods section, or hot cereal section of your store.
