¾ cup whole wheat pastry flour ¾ cup oat bran 1 tsp. baking powder 1 tsp. cinnamon ½ tsp. baking soda ½ cup brown sugar 1/3 cup banana (1 medium), mashed 1 6-oz. plain yogurt (non-fat) 2 egg whites or 1 whole egg 2 Tbsp. canola oil 1 tsp. vanilla ½ cup shredded carrot ½ cup chopped currants OR raisins, craisins, etc. ½ cup chopped walnuts
Spray or oil 12-muffin pan.
Combine flour, oat bran, baking powder, cinnamon, baking soda.
Combine brown sugar, banana, yogurt, egg, oil, vanilla, and carrot. Add dry ingredients, stirring by hand just until combined. Stir in nuts and currants. Bake at 400°F for 20 minutes.
Note: Look for oat bran in the hot cereal section of the grocery store or the natural foods section.
