½ cup whole wheat pastry flour
1 cup flour
¼ tsp. baking powder
1 tsp. baking soda
1 ½ tsp. cinnamon
½ tsp. ground cloves
¼ tsp. nutmeg
2 Tbsp. canola oil
¾ cups sugar
½ cup egg substitute OR 4 egg whites OR 2 eggs
¼ cup water
½ (15 oz.) can pumpkin
¼ cup applesauce
Place together in a bowl the flours, baking powder, baking soda, cinnamon, cloves and nutmeg. Set aside; combine oil, sugar, egg substitute (or egg whites), water, pumpkin, and applesauce. Add to dry ingredients and blend. Pour into 9" x 5" loaf pan. Bake at 350°F for 45 to 55 minutes or until toothpick comes out clean. Remove and cool on wire rack.
Note: Pumpkin - Freeze the remainder of the can for the next time, or make a double recipe and freeze a loaf for later.
Yield: 10 slices (1 loaf).
