2 cups whole wheat baking mix (such as Hodgson Mills Multi-Purpose Baking Mix) ½ cup low-fat buttermilk 2 egg whites OR ¼ cup egg substitute 1 cup finely diced or shredded apple (1 medium) 2 Tbsp. sugar ¼ cup currants or raisins, chopped 1 egg white, beaten
Preheat oven to 425°F. Combine baking mix, buttermilk, egg, and sugar in a large bowl until almost combined. Stir in currants and apple until mixture clumps. Turn onto a floured surface and pat out into a 9-inch circle and cut into 8 pie-shaped wedges. Place wedges on an ungreased cookie sheet and brush with egg white sprinkle tops with cinnamon sugar. Bake for 10 minutes or until lightly browned.
Freeze what you won't use in a day and then thaw as needed.
