¾ cup sugar ¼ cup unsweetened applesauce ½ cup egg substitute or 2 whole egg, omega 3 enriched preferred 1 can (15-oz. can) no salt added pinto beans, drain and mash 1 medium granny smith apple, diced ½ cup dried cranberries/craisins ¼ cup skim milk 2 tsp. vanilla 1 1/3 cups flour 1 tsp. baking soda ¼ tsp. allspice 2 tsp. cinnamon ½ tsp. ground cloves
Pre-heat oven to 375°F.
Combine sugar, applesauce, egg substitute, mashed beans, apples, craisins, milk and vanilla in a large bowl.
In a separate bowl, sift together dry ingredients. Add wet to dry mixture along. Stir with spoon until just combined. Pour batter into a 9x13 inch cake pan sprayed with vegetable oil spray.
Bake at 375° for 45 minutes. Allow to cool; cut into squares. Freeze leftover that you will not use in a day or two.
