1 cup whole wheat pastry flour 1 cup all-purpose flour ¼ cup ground flax seed meal 3 Tbsp. oat bran 1 tsp. baking powder 1 cup oatmeal ½ cup canola oil 2 Tbsp. skim milk 2/3 cup brown sugar 2/3 cup sugar 1 Tbsp. vanilla extract 2 large eggs (or ½ cup egg substitute) ½ cup mini chocolate chips ¼ cup chopped raisins, currants, or dried cranberries
Preheat oven to 375°F
Combine flours, flax seed meal, oat bran, baking soda and oatmeal in a medium bowl. Combine oil, milk, sugars, vanilla and eggs until well combined. Add the flour mixture. Stir in raisins and chocolate chips.
Drop by tablespoonfuls onto ungreased baking sheets. Bake for 7-10 minutes or until golden brown. Cool slightly and remove to wire racks until completely cool.
