½ cup low-fat granola cereal OR chocolate wafer cookie crumbs OR whole wheat graham crackers1 box silken tofu, firm or extra firm1 tsp. vanilla extract1/3 cup sugar, or sweetener of choice¼ cup cocoa powder
Assemble this dessert in 4-stemmed glasses or dessert bowls. Place the 2 tablespoons of granola in the bottom of each glass. Blend tofu, sugar and cocoa powder in a food processor until very silky smooth. Divide this pudding among the glasses. Cover and refrigerate until ready to serve.
Top with fresh berries if desired before serving.
Choose cereal, chocolate wafer cookies or graham crackers that do not contain partially hydrogenated oils in the ingredient list.
