Chocolate Parfait

½ cup low-fat granola cereal OR chocolate wafer cookie crumbs OR whole wheat graham crackers
1 box silken tofu, firm or extra firm
1 tsp. vanilla extract
1/3 cup sugar, or sweetener of choice
¼ cup cocoa powder

 

Assemble this dessert in 4-stemmed glasses or dessert bowls.  Place the 2 tablespoons of granola in the bottom of each glass.  Blend tofu, sugar and cocoa powder in a food processor until very silky smooth.   Divide this pudding among the glasses.  Cover and refrigerate until ready to serve.

Top with fresh berries if desired before serving.

Note:  If you do not have a food processor you can do this in a blender, but it will require you to stop and scrape until all is blended and it becomes shiny with no lumps remaining.  A mixer will not blend the tofu to the correct silky texture. 

Choose cereal, chocolate wafer cookies or graham crackers that do not contain partially hydrogenated oils in the ingredient list.
