6 medium peaches, sliced or use 1 pound frozen, thawed peaches (no sugar added)¼ cup plus 1 Tbsp. sugar1 Tbsp. cornstarch1 tsp. almond extract1 tsp. ground cinnamon½ cup all purpose flour½ cup whole wheat pastry flour1 tsp. baking powder2 Tbsp. canola oil½ cup skim milk or plain soy milk
Preheat oven to 375°F. In a glass 9" x 9" dish, combine peaches, ¼ cup of the sugar, cornstarch, and cinnamon; toss to coat peaches. Microwave about 4 minutes, stirring after each minute, until mixture thickens. Stir in almond extract.
To make the topping, in a large bowl combine flours, 1 Tbsp. sugar, baking powder, and oil. Work with a fork until blended. Add milk and stir until flour mixture is evenly moistened.
Drop 8 tablespoons of topping mixture onto peach mixture. Bake until topping is golden brown and filling is bubbly, about 20 to 25 minutes. Cut into 8 pieces and serve.
