One Pan Chicken and Couscous

1 Tbsp. olive oil

1 small red onion, chopped

1 medium red bell pepper, cored, seeded and diced

½ lb. boneless, skinless chicken breast, cut into thin strips

¼ tsp. black pepper

½ tsp. paprika

½ tsp. ground ginger

½ tsp. ground cumin

1 cup low sodium chicken broth

½ cup whole wheat couscous


Heat oil in large sauté pan.  Add onion and sauté 2 to 3 minutes.  Add bell pepper, cook 1 minute, then add chicken strips and cook over medium heat about 2 minutes.  Add black pepper, paprika, ginger, and cumin and cook 30 seconds.

Add chicken broth.  Bring to a boil.  Stir in couscous, remove from heat, cover pan and let stand 10 minutes or until couscous is tender and liquid is absorbed.  Serve immediately.
