12 oz. Tilapia fillet, cut into 2 pieces (any kind of fish can be used) 1 ½ Tbsp. lime juice (about 1 lime) 1 medium Roma tomato, chopped ½ medium red onion, chopped 3 Tbsp. chopped parsley ½ tsp. olive oil ¼ tsp. black pepper ¼ tsp. salt
Preheat over to 350°F. Pat fish dry with paper towels and place in baking dish.
Mix remaining ingredients together and pour over fish. Bake for 15-20 minutes or until fish flakes.
