2 small baking potatoes (½ lb.), scrubbed, unpeeled and quartered
1 ½ cups frozen broccoli, thawed
1 medium onion, chopped
2 Tbsp. non-fat cream cheese (from 8-oz. tub)
1 tsp. olive oil
1/8 tsp. salt
Dash pepper
Place potatoes and onion in large saucepan; add water until 2 inches above potatoes. Bring to a boil. Reduce heat; cover and simmer 10 minutes or until tender. Drain.
Heat broccoli in microwave for 2 - 3 minutes. Add to potatoes along with cream cheese, oil, salt and pepper
Mash with potato masher or pulse in food processor, being careful not to over-blend or it will become "gooey".
Note: The trend of puréeing vegetables with mashed potatoes takes a delicious turn with the addition of broccoli.
Yield: 6 servings (1/2 cup each)
