Confetti Grain Pilaf

1 tsp. olive oil
1 tsp. garlic, chopped
½ cup onions, chopped
¼ cup celery, chopped
¼ cup carrots, chopped
¼ cup red peppers, chopped
½ cup tomatoes, chopped
¼ cup mushrooms, chopped
1 bunch fresh chives or scallions, sliced in rings
2 cups barley, buckwheat, bulgur, brown rice, millet or other grains cooked, cooled and separated with fork
Pepper to taste

 

In large non-stick skillet over medium heat, sauté garlic, onion, celery, carrots and red pepper in oil for about 3 min.  Add tomatoes and mushrooms and sauté 3 minutes longer.

Add grains and chives, stirring constantly until pilaf is hot.  Season with pepper and salt-free seasoning if desired. 

Note:  Good use for leftover grains.
