Flamboyant Rice

½ cup raw brown rice (not instant)
1 cup water
¼ cup chopped onion
2 Tbsp. chopped green pepper
2 Tbsp. shredded carrot
1 Tbsp. fresh parsley, snipped
1 bay leaf

 

Combine, all ingredients, heat to boil, reduce to simmer and cook, covered (no peeking) for 45 minutes.  Remove bay leaf, fluff with fork and serve.

If you have a rice cooker, simply put in all ingredients and turn on.

 

Yield: 3 servings (1/2 cup)
