½ cup lentils, rinsed 2 cups water 2/3 cup celery, chopped 2/3 cup onion, chopped 2 tsp. canola oil ½ cup bulgur ¼ tsp. salt
Combine lentils and water in saucepan. Bring to a boil, reduce heat, cover and simmer 20 minutes. Do not drain.
Meanwhile in a pan, sauté onion and celery with oil until softened. Stir in bulgur and cook 2 minutes. Add to lentils along with salt; simmer until liquid is evaporated, about 10 minutes.
