1 1/3 cups water 1 1/3 cups unsweetened apple juice 1 cup uncooked long-grain brown rice 2 Tbsp. currants or raisins ¼ tsp. ground cinnamon 2/3 cup peeled, coarsely chopped kiwifruit (about 2) ¼ cup diced unpeeled red apple ¼ tsp. grated orange rind and diced sections
Combine water, apple juice and rice in a large saucepan.
Bring to a boil; add rice, currants and cinnamon, stirring well.
Reduce heat, cover and simmer rice for 45 minutes.
Meanwhile, chop kiwi and apple, zest orange and set aside. Remove rice from heat and add kiwi mixture; toss gently.
Yield: 4 cups
