1/3 cup salsa½ cup low fat mayonnaise1 Tbsp. honey1 cup cooked chicken breast, diced1 cup celery, thinly sliced1 cup seedless grapes, halved2 Tbsp. slivered almonds or pecans, chopped¼ cup scallions or green onions, sliced
Combine salsa, mayonnaise and honey in a 3-quart salad bowl. Mix well.
Stir in chicken, celery, grapes and almonds. Cover and chill in freezer for 10 minutes.
Sprinkle with scallions or green onions to garnish and serve.
Yield: 4 servings (1 cup each)
