Chicken Salad

1/3 cup salsa
½ cup low fat mayonnaise
1 Tbsp. honey
1 cup cooked chicken breast, diced
1 cup celery, thinly sliced
1 cup seedless grapes, halved
2 Tbsp. slivered almonds or pecans, chopped
¼ cup scallions or green onions, sliced

 

Combine salsa, mayonnaise and honey in a 3-quart salad bowl.  Mix well. 

Stir in chicken, celery, grapes and almonds.  Cover and chill in freezer for 10 minutes. 

Sprinkle with scallions or green onions to garnish and serve. 

 

Yield: 4 servings (1 cup each)
