6 slices turkey bacon 1 ½ lbs. red potatoes 1 cup chicken broth (reduced sodium) 1 Tbsp. sugar 1/8 tsp. salt 1/8 tsp. pepper 1 ½ Tbsp. all-purpose flour ¼ cup cider vinegar 1 Tbsp. fresh parsley, chopped 2 green onions, chopped
Cook bacon, discard fat, crumble and set aside.
Place potatoes in a saucepan; cover with water and bring to a boil. Cover, reduce heat and simmer 6 minutes or until just tender; drain. Peel and cut into ¼-inch slices.
Combine broth, sugar, salt, pepper, vinegar and flour in a saucepan. Whisk until smooth. Bring to a boil, reduce heat and simmer 5 minutes.
Combine potatoes, broth mixture, turkey bacon, parsley and green onion in a bowl and toss gently to coat.
Yield: 6 servings (2/3-cup each)
