1 lb. Brussels sprouts, trimmed and halved 1 tsp. grated orange rind 1/3 cup fresh orange juice ¼ tsp. salt 1/8 tsp. pepper
Steam the Brussels sprouts in pot fitted with collapsible vegetable steamer and ½ inch water and tight fitting lid for 7 minutes or until tender.
Remove sprouts and place in warm serving bowl. Add orange rind, orange juice, salt and pepper and toss to coat.
Note: When you grate the orange rind, avoid the bitter-tasting white layer, or pith, just beneath the surface. You want only the orange part. You can use ¼ tsp. dry orange peel if desired.
